STAYCATION

Yesterday would have marked the first day of my vacation, as I would have been travelling out of town to visit relatives. However, I messed up the schedule on my part-time job, and more importantly, my 2nd car, the car my daughter drives went up and needs a new engine to the quoted tune of $3500, which includes labor! No matter, I wouldn't have had that kind of money whether I went out of town or not. But, as a result, she is back to catching rides, walking, or when possible, her and I switching off on driving the 'gas-hog' truck, so that she can get to work. She had planned to start back to school this month, but that now looks questionable.

   Anyhow, I thought I'd still embody a vacation frame of mind and make the best of it. It seems to be working pretty good so far because I even got annoyed that I had to interrupt my couch sitting to get up and go to my part-time job!

Along with my couch-sitting, I did start the day off right by doing something I'd been waiting on an opportunity to do before I went in to work. I got to try out those new IHop pancakes that have been driving me mad whenever I see the commercial! I didn't eat in-house as I'd anticipated doing. I was just so tired and time was slipping away from me. My daughter went and got them as take out. She likes the french toast, especially the stuffed french toast, so she got that. I got the Red Velvet pancakes. The pancakes where the lady says, '...these taste like a cupcake, I love it.' (Why does everyone talk so light and mellow in that commercial?)
     Those IHop Red Velvet pancakes did, indeed taste like a cupcake! A warm from the oven Red Velvet cupcake!They were not overly sweet, so you could still choose to put syrup on them. But they were good as is with just that swirl of icing on them. In fact, putting syrup on them seemed to alter the taste entirely. I liked the added moistness of the syrup, but I think I could have gotten away with an extra cup of the icing on the side to dip my pancakes in. Yummy!
